Some say September is to early to start obsessing over Autumn. Especially because of the extremely warm weather in the sunshine state! However, Stephanie and I disagree! Seeing as how we are both obsessed with Pumpkin anything, I decided to share a recipe with y'all that my family had been making for years!
This is probably the easiest cupcake recipe you will ever make! It only takes two ingredients! And the end product will amaze you! Are you ready for this?
Pumpkin Cupcake Ingredients:
• 1 box Spice Cake mix
• 1 can Puréed Pumkin
Just follow the directions on the box and you have yourself a delicious autumn treat! But what is the only thing that would make this treat even better? What's a cupcake without some frosting!
Cream Cheese Frosting Ingredients:
• 8 Oz package of cream cheese, softened
• 4 tbsp of butter, softened
• 3 cups of powdered sugar
• 1 tsp vanilla extract
First mix the cream cheese, butter, and vanilla with an electric hand mixer. Once those ingredients are well blended begin adding small amounts of sugar while blending the cream cheese mixture on a low setting! I find that the frosting is better once it has chilled in the fridge for at least an hour.
